Fish head with chopped peppers should be delicious. The key is to marinate the fish head to taste. Others are simple.
Step1:After descaling and cleaning, separate the head from the body.
Step2:Cut the fish head from the middle. Put on the sauce made of cooking wine, soy sauce, white pepper, chopped pepper sauce, fish sauce and oyster sauce. Marinate with ginger slices and scallion.
Step3:Put the fish head covered with soy sauce into a container. Seal it with plastic film and refrigerate it for more than 2 hours.
Step4:Put the water in the steamer and put it on the fire. Pour a tablespoon of oil on the marinated fish head and steam for 15 to 20 minutes.
Step5:Steamed fish heads will have a lot of water. The water is fishy. It's going to be poured out. So your fish head will be more than half successful.
Step6:Prepare another big dish. Carefully spread the steamed fish head on the big dish. Do not stick the green onion or ginger slices. Then spread the fresh chopped peppers evenly on the fish head. If you can eat spicy, you can add some wild peppers.
Step7:Heat the wok over the fire. Pour 4 to 5 tbsp of oil into the wok and stir fry in pepper oil until it is 80% hot.
Step8:Pour hot oil on the chopped peppers. Sprinkle with chopped chives.
Cooking tips:Marinate with cooking wine, soy sauce, white pepper, fish sauce, oyster sauce, ginger slices, scallion knot and chopped peppers for more than 2 hours before steaming. There are skills in making delicious dishes.
