Step1:The black chicken is slaughtered and made clean. It is chopped into pieces. The bleeding water is soaked in clear water.
Step2:The root of Cordyceps flower should be removed and washed (if it is dry, it needs to be soaked in warm water and then softened); the onion, ginger and coriander should be washed separately. The onion should be cut into sections. The ginger should be sliced and the coriander should be chopped.
Step3:Add water to the casserole. Put the black chicken to boil and remove the floating foam on the surface of the clean black chicken. Pour the blood water soaked in the black chicken into the casserole and mix well. Wait until the soup in the casserole boils again. When all the floating foam in the casserole floats on the soup surface, quickly skim the floating foam.
Step4:Put the black chicken into the casserole. Add onion, ginger, Cordyceps flower, cooking wine and pepper. Bring to a boil over high heat. Turn to low heat and simmer for 1 hour. Add salt and chicken essence to mix the taste. Sprinkle with coriander.
