Step11:Add 1g of raw meal to the shredded meat and stir well.

Step13:Peel and root the shoots. Clean them.
Step14:Then cut it into filaments. Then cut it shorter. I cut it longer. It's not very good when I pack it.
Step15:Sit in the pot and boil the water. After the water boils, add a small spoon of salt (the salt is not in the list of ingredients).
Step16:Add shredded bamboo shoots. Blanch for three minutes. Remove the astringency.
Step17:Cut the red pickled peppers. Cut the dried peppers into small pieces.
Step18:Cut the remaining fat into slices. Add three slices of ginger and make lard. Remove the oil residue and leave the lard.
Step19:Add the shredded pickled peppers and the hot pepper section. Stir fry the red oil over low heat to give the fragrance.
Step20:Put in the marinated shredded meat and spread it.
Step21:Put in the pickled vegetables and stir fry them to taste sour (wash them with water twice before cooking. If there is no pickled vegetables, you can also use the bagged snow vegetables bought by the supermarket).
Step22:Add 4G salt, 1g sugar, 15g raw soy sauce and 3G fish sauce (if there is no fish sauce, you can put less chicken powder. The purpose is to improve the freshness).
Step23:Stir evenly.
Step24:Pick out the dry red pepper section inside. You don't need to pick out the shredded pickled peppers.
Step25:The dough is twice as big. Stick dry powder on your fingers and poke a hole in the middle. The hole does not retract. It means the dough is just right.
