Step1:Prepare ingredients: 240g flour, 120g leek, 2 eggs, 50g foam noodles.
Step2:Make noodles first - prepare some boiled water. Some warm water. Pour about 130 ml boiling water + 50 ml warm water into the flour basin (the specific amount of water will vary depending on the flour. Add it while you measure it). Mix it into flour flocs, and then form a smooth dough. Cover the basin and wake up for a while.
Step3:Wash the leeks, cut them into small pieces and put them into a large bowl. Chop the vermicelli and put them in the leek bowl together. Shell the eggs and put them into a small bowl. Add a little salt and stir to make the egg liquid.
Step4:Put a proper amount of oil into the clean pot. Heat it up and turn off the heat for two minutes. Pour it into the leek bowl. Stir it evenly (put the oil first and then the filling will not come out of the water).
Step5:Leave the oil in the pot and open fire. Pour the egg liquid into the pot and fry with chopsticks until it is broken into broken eggs. Put it into the leek bowl.
Step6:Stuffing seasoning - add some salt, 1.5g sugar, 1.5g chicken essence, a little pepper powder, 1 / 2tsp oyster sauce and 1tsp cooked sesame into the leek bowl. Mix well.
Step7:Sprinkle some dry flour on the chopping board, take out the wake-up dough, divide it into long strips, cut them into equal parts, press them into small circles with the palm, and roll them into thin circles with a rolling pin.
Step8:Put in the right amount of stuffing. Fold it in half and knead it. Then fold the edge part from bottom to top and press out the lace to seal the box more firmly. Pack all the fillings in turn.
Step9:It's all wrapped leek box. I have 15 bags.
Step10:Put a little oil into the pan. Put the wrapped leek box into the pan and heat it over medium and small heat. Both sides are golden.
Step11:Finished drawings. My flour is high gluten flour. I feel it's too gluten. So I use boiled water and a little warm water to mix it. The fried leek box is softer.
Cooking tips:* if it's not high gluten flour, it's OK to use only warm water and flour. And soft. *Put oil in leek before adding salt to the stuffing. Then the stuffing will not make soup. There are skills in making delicious dishes.
