Every time I go out to dinner with Mr. Hu, I order a dish -
Step1:Kill a piece of grass carp in the vegetable market. Separate the fish bones and meat, and mix well with pepper, salt, cooking wine, chicken essence and potato starch. Marinate for 15 minute
Step2:After the fish is marinated, prepare other side dishes and cut them as you lik
Step3:Garlic cloves and spicy millet are chopped into small grains respectivel
Step4:Heat in an iron pot and add some lard to boil. Stir in pickled vegetables, scallions, pickled peppers, ginger slices and sea peppers
Step5:Stir fry for a while, add some high soup or boiled water into the pot and boil for 5 minutes
Step6:Sprinkle a proper amount of white sugar to freshen the fish after boiling. Then pour the marinated fish heads and bones into the pot and cook them
Step7:After the fish head and bones are cooked, first take them out and put them in the fish basin for bottoming. Leave the soup in the pot and add the marinated fish slices to cook them
Step8:When the fish fillet is cooked, put it in the basin and put some garlic, millet and chili respectively. Put some cooking oil into the pot and boil it. Pour it into the basin and sprinkle it with millet and chili. Finally, add some coriander to decorate it
Cooking tips:1. When cooking fish, stir fry pickled vegetables with lard, add boiled water or high soup to boil. The color of the soup is more golden. 2. Sprinkle proper amount of white sugar to improve the freshness and taste.
