Step3:Marinate - add 2G salt, 2G white pepper, 2G baking powder, onion and ginger water, a little cooking wine, an egg white, proper amount of starch, a scoop of raw soy sauce, stir clockwise until it is strong (mainly manifested as the meat is sticky and hard to stir). Pour in a little cooking oil, seal the surface of the meat to make it more moist. Marinate for 1015 minutes.
Step4:Oil - add oil to the pan (more oil can be added in this step). The oil is slightly smoky. Put the shredded meat into the pan to spread. When the meat is discolored and broken, take it out for standby, and pour out the oil at the same time.
Step5:Stir fried sauce - stir fried sugar first and then sauce. Add a little base oil to the pot. Add 15g white sugar at the same time (it can be reduced as appropriate). Stir fry until the sugar is melted (no need to change color). Add 80g sweet noodle paste. Add half a bowl of water at the same time. A spoonful of cooking wine. Stir fry until the sweet noodle paste is boiled. Turn the heat to collect the sauce until it is thick.
Step6:After the sauce is thick, pour in the shredded pork. Stir fry until each shredded pork is covered with sweet sauce. Pour less sesame oil before leaving the pot.
Step7:Put the plate out of the pot.
Cooking tips:1. If you don't like the taste of scallion, you can also replace it with onion. At the same time, you can also add other side dishes. Traditional dishes can also be innovated. 2. Add baking powder when salting, which helps to increase the tenderness of meat. 3. When lubricating oil, the oil should be wider, which can avoid the adhesion of meat. 4.
