I always like sweet and sour pork ribs. Today, my daughter-in-law wants to eat potatoes and beans. Then make a stewed pork ribs with beans and potatoes.
Step1:Soak the cut ribs in cold water. Then put them into cold water for blanching.
Step2:Take out Zhuo's ribs. They will be sauteed with sugar later, so they don't need to be salted.
Step3:Put oil in the pot. When the oil temperature rises, put in a proper amount of sugar (you can use rock candy or white marshmallow. But I don't think rock candy is very good. White marshmallow is not easy to color. White marshmallow is still good. You can choose according to yourself
Step4:Stir the sugar first. Don't over heat. Keep the heat low. Stir slowly. The color will get darker and darker as you stir.
Step5:Be sure to control the size of the fire. When the sugar bubbles slowly, it means that the sugar is fried well.
Step6:Quickly add the blanched ribs. Stir fry them quickly. Color the ribs. Be careful not to scald the splashed oil.
Step7:When the ribs are stir fried, you can put two spoonfuls of raw soy sauce to make the color darker. This is the color after stir frying the raw soy sauce. It's darker than the color after stir frying the sugar.
Step8:Put in the potatoes and continue to stir fry.
Step9:Stir fry the potatoes a little. Let the potatoes have some color. Because of the soy sauce, the potatoes will be colored after stir frying.
Step10:Also put in the beans. Continue to stir fry. If you think the color is light, you can put in the raw or old soy sauce (this depends on your preference).
Step11:Stir fry a few times to make potatoes and beans have some color. Add hot water (be sure to put hot water). Add water as little as possible after one time. The water is at least more than the ingredients. Then add onion, ginger, garlic, seasoning and cinnamon (because of the sugar color of stir fry, so you can only put seasoning at the back. Otherwise, we suggest that you stir fry seasoning such as seasoning and cinnamon after you put oil. Stir fry meat after the smell is produced).
Step12:Put in 1 spoon of soy sauce at this time, so that the ingredients can be colored better.
Step13:Put in cooking wine.
Step14:Then shake the pot a little. Let the old soy sauce and cooking wine blend into the soup.
Step15:Cover the pot. Turn to medium heat and start stewing.
Step16:About 20 minutes. Put salt (put salt late to make meat easier to rot). Sugar.
Step17:Continue to cover the pot and stew for about 5 to 10 minutes.
Step18:Wait for the juice to slowly collect. Shake the pot from time to time.
Step19:When there is not much left in the juice, turn over the pot a few times to make the color of the ingredients even.
Step20:Out of the pot. Because I eat it at home, I don't need to build i
Cooking tips:Some small skills are explained in the steps. If you want to stew the ribs, you can use a casserole to wait for a while. Make the soup (not too long). Then take out the ribs and stir fry them with sugar. Salt must be put back. It's not necessary to worry about whether the food will be too sweet if you put sugar in the back again. After the sugar color is fried, it's just for coloring. The sugar in the back is for freshness. At the same time, it can make the color of the food brighter (brightening effect). It won't make the whole food sweet if you put sugar in the back after the sugar color is fried. There are skills in making delicious dishes.
