It's my favorite dry fried fish with sweet and spicy taste.
Step1:Marinate Paralichthys olivaceus - cut the belly of the fish. Cut the cross cut flower on both sides. Marinate in salt, sugar and chili sauce for 20 minute
Step2:Dry fry the flounder - pepper, ginger and garlic. Slide into the flounder. Simmer on low heat. Do not add water (dry burn). Until the fish is dry and hard. One side is golden yellow. Turn it over carefully. Add the spiced vegetable stem. Fry for another 15 minutes. Make the other side dry and hard. Turn golden yellow. Take the plate. Garnish with cilantro.
Cooking tips:1. Do not add water for dry cooking. It needs enough oil. It is better to use a non stick pan. 2. Don't turn over the fish until it's dry and hard, or it will scatter. There are skills in making delicious dishes.
