Step1:This is a simple way for me. When I buy the pork tripe, I wash it inside and outside with raw meal. Marinate it with cooking wine for ten minutes. Wash the chicken and make it into pieces. Boil the water in the pot. Put two pieces of ginger in it. Fish the chicken out of the water for later use. Wash the pork tripe in water and blanch it. After blanching, fish it out and wash it.
Step2:Put the chicken into the pork tripe. Wrap the pepper in gauze bag. No gauze bag can be used. Put enough water in the casserole. Put the pork tripe, pepper, some dates, medlar, two pieces of ginger and two spoons of white wine into the pot together. Boil in high heat. Turn the heat down for an hour and a half.
Step3:Then take out the pork tripe and cut it into small pieces. Put it in the soup with the chicken for a few minutes. Add some salt to taste it. I don't like to put MSG or chicken essence in the soup. If you like, you can put less to taste it.
