Step1:Prepare materials. Remove the root of Agrocybe chashugu, soak it in boiling water, wash it and cut it into sections. Cut the duck leg into pieces. Dice scallion, red pepper, ginger, garlic and green pepper. Set aside.
Step2:Put the duck into the pot. Add the water. After boiling, add some cooking wine and scallion and blanch for about 3 minutes. Remove. Wash and drain the water for standby.
Step3:Put in the oil in the pot. Add the dried red pepper, chopped green onion, shredded ginger, sliced garlic, star anise and prickly ash to make it fragrant.
Step4:Pour in the duck. Stir fry for 1 minute.
Step5:Pour in cooking wine and soy sauce. Season and color.
Step6:Put in the tea tree mushroom and stir fry it.
Step7:Put water in the pot. Do not pass the duck. Add some salt and sugar. After boiling over high heat, cover the pot. Turn to medium low heat and simmer until the duck is crispy.
Step8:Open the lid. Turn the heat to collect the juice. Pour in the green pepper. Stir fry for a few times.
Step9:Turn off the fire and fill the basin.
