Step1:Soak the mushrooms and Hericium erinaceus for 1 hour in advance (wash them thoroughly, or they will taste bitter. The color of the water will be clear and not yellow); buy back the freshly slaughtered Luhua chicken, wash it and cut it into small pieces for use.
Step2:Prepare half carrot and green pepper. Cut ginger.
Step3:Add water into the soup pot (about 1500ml) and put mushrooms and Hericium erinaceus into it. Boil it over medium and low heat to make a thick soup. About half an hour.
Step4:The cut chicken can be blanched with boiling water, or not. It depends on your habits. Then stir fry the chicken in the hot pot. Add some cooking wine. Add in the old soy sauce and stir well.
Step5:Add in the mushroom soup just cooked. Bring to a boil, add ginger and carrots. Turn the heat to cover and simmer for 15-20 minutes.
Step6:Then add in the onion, green pepper and salt and simmer for another 5 minutes.
Step7:Put some monosodium glutamate in the end. It's ready to come out of the pot. There is thick soup in it. It's very fragrant. You can mix rice.
Cooking tips:If you like spicy taste, you can add chili and seasoning in the process. There are skills in making delicious dishes.
