Highlight: the fish is tender, attractive in color and spicy.
Step1:Prepare the ingredients. One crucian carp, 50g green pepper, 50g red pepper, 10g ginger, 10g shallot, 15g bean paste, 20ml cooking oil, 2G chicken essence, 5ml delicious soy sauce, 2G sugar and 5ml cooking wine.
Step2:After cleaning the crucian carp, marinate it with 5g ginger slices and cooking wine for 20 minutes.
Step3:Cut the remaining ginger slices, green pepper slices, red pepper slices and shallot slices for standby.
Step4:Add a small amount of oil in the pot. Then put in the fish. Fry until both sides are brown.
Step5:Put cooking oil in the pot. Then add bean paste. Stir fry the red oil.
Step6:Add ginger slices and stir fry to give the fragrance. Then add in the green and red peppers and stir well.
Step7:Pour in water.
Step8:Put the fish in the pot. Put in delicious soy sauce and sugar to taste after boiling. Then turn to medium heat and simmer for seven or eight minutes. Finally put in chicken essence and drain the juice out of the pot.
Step9:Sprinkle with chives after packing.
Cooking tips:1. I use a non stick pot. If there is no non stick pot, you can sprinkle a little salt at the bottom of the pot when frying fish, or pat a proper amount of dry powder to prevent the fish skin from sticking to the pot; 2. Because a large amount of bean paste is used, and there is salt in the bean paste. So there is no salt in the dish. There are skills in making delicious dishes.
