Step1:Chop the chicken into large pieces. Soak the tea tree mushroom in advance.
Step2:Wash the tea tree mushroom and remove the root. Cut it into small pieces.
Step3:Blanch the chicken.
Step4:Drain the water.
Step5:Put the oil in the pan. Add the sugar. Boil over low heat until brown.
Step6:Stir fry the chicken in the boiling water until the meat is firm.
Step7:Add soy sauce and cooking wine and continue to stir fry.
Step8:Add onion, ginger, garlic and red pepper to stir up the fragrance.
Step9:Add tea tree mushroom and stir fry.
Step10:Add water. No chicken pieces or tea tree mushrooms. Turn to medium low heat and simmer for about 40 minutes.
Step11:Add salt at last. Collect the juice on the fire.
Step12:Sprinkle it with chives or cilantro to make it out of the pot.
