Step1:Add cold water and two pieces of ginger to the pot. Drop a few drops of lemon juice. Put the beef into the pot. Boil the water and cook for a few minutes. Drain the blood foam. Then take out the beef brisket and wash it with hot water. Put aside the water for cooking the meat.
Step2:In the pot, add oil and cook until it's ready. Add potatoes, carrots and onions, stir fry until the potatoes turn golden. Then, put in the oil and set aside.
Step3:Stir fry the onion, ginger, star anise and crystal sugar with the remaining oil in the pot.
Step4:Stir fry the beef brisket after blanching for a few minutes. Then add cooking wine and stir fry again.
Step5:Add in the water before cooking the meat (not over the brisket). Add some soy sauce and salt to taste. Turn the heat to a low heat and simmer for about an hour.
Step6:An hour later, pour potatoes, carrots and onions into the pot and stew for about 10 minutes. Then turn the heat to collect the juice.
