When I was a child, I recalled the feeling of every family steaming steamed buns when I arrived in Yangzhou for the new year.
Step1:1. Mix flour - first melt the sugar in a little warm water for standby. Then melt the yeast powder in 150ml water for standby for 10 minutes. When you leave a little flour to wrap the bun, use it. Put the rest in the basin. First add sugar water and then yeast water. Then add water. Add less when adding water. Then knead the flour into a ball.
Step2:2. Wake up - cover with plastic wrap and wake up for 1 hour. The dough is twice as big as before and has many holes. See figure.
Step3:3. Filling - dice all the vegetables. Mix with the mashed meat. Put cooking wine, salt and shallot. You can also add a raw egg and chicken essence according to your taste Stir until all materials are well mixed.
Step4:4 - baozi - take out the hair, knead and cut it small. When baozi is wrapped, the skin should be thicker. (the process of wrapping a bun is relatively simple. Hold a piece first, and then turn it around while pinching. The left thumb can squeeze the stuffing into it until it's all pinched.)
Step5:5. Steamed bun - after the steamed bun wakes up for 1015 minutes, put on the steamer. The steamer should be padded with a layer of wet gauze. The distance between the steamed buns should be 3cm. Steam in cold water for 25 minutes (because the filling is raw, so the time is longer) and cool for 5 minutes. Then take it out.
