Beijing fried noodles with sauce

My family is in Shandong. Northerners like noodles best. They just want to eat it if they don't eat it for two days. Sometimes they eat noodles almost every day. So fried sauce noodles, beef noodles, soup noodles and fried noodles are eaten in turns. Recently I went to Beijing. I ate the old Beijing fried noodles with sauce. It's not bad. I made it by myself. It's bigger than the finished products in the commercial street. I use automatic noodle machine to roll noodles. Without noodle machine, I can buy fresh noodles directly or roll them with noodle hand. If you roll the dough by hand, the water consumption will increase to about 160g. -

Cooking Steps

  1. Step1:Put the flour into the noodle machine. Cover and turn on the noodle machine. Slowly fill water from the water injection port. After 18 minutes, all the noodles are rolled.

  2. Step2:Put some oil in the pot and heat it.

  3. Step3:Stir fry with scallion and ginger.

  4. Step4:Cut the streaky pork into thin shreds. Stir fry the flavor and put the shredded pork.

  5. Step5:Stir fry until the meat is discolored. Add a spoonful of sweet sauce. Stir fry a spoonful of bean paste.

  6. Step6:Add some water, cover the pot and cook over low heat until the sauce is thick, then turn off the heat.

  7. Step7:Put some water in another pot, boil it, put noodles in, and then fish out.

  8. Step8:Put noodles on a plate. Place all kinds of vegetable shreds around. Pour in the fried sauce and mix well.
