Hard fried meat is a famous dish in Boshan, Shandong Province. Every family can make it. From snacks to big ones, I can't buy authentic fried meat when I go to university in other places, so I tried to make it myself, just vaguely remember that my mother did it. Step1:First of all, cut the meat into long strips, not too big. Cut the onion and ginger into pieces and put them into the basin. Then pour in the soy sauce, about two teaspoons (add it according to personal preference). Then pour in the pepper water (or cooking wine) which is boiled by young people and stir for half an hour.
Step2:Half an hour later, put the eggs in the basin, add some flour and starch, and mix well.
Step3:Make it thick, not too thin, or the bread will not hold the meat, nor too thick, or too many noodles will not taste good.
Step4:When frying, use a small fire to prevent the meat inside from pasting before it is cooked. If you want to eat crispy food, don't fry it too much, then turn the heat up so that the oil warms up, and then fry the meat in the pot for a second time, so that the noodles will become crispy.
