Step1:The spareribs are lifted and soaked for an hour, and the water is changed twice. Then add onion and cooking wine to the pot and fry the ribs in cold water. Remove the bleeding foam and drain the rib
Step2:Stir fry the hot oil with scallion and ginger until it's half dry. Stir in the dried pepper and sugar until the sugar dissolves
Step3:Add spareribs, stir fry and sprinkle with five spice
Step4:Stir fry until the ribs are burnt yellow, pour in the old soy sauce and color evenly, then add some raw soy sauce to tast
Step5:Pour in boiling water and heat for 15 minutes, add salt and simmer for 30 minute
Step6:Add in the celery and heat to collect the juice, mix in the chicken essence, and you will be out of the pot
Cooking tips:I don't need to add celery because it's crude fiber and it's tasty with ribs. If you like to add other dishes, you can make them delicious according to your own preference.
