Step1:Fry carp in a nonstick pan until both sides are brow
Step2:Heat the other pot and pour in the oil. Add in the onion, ginger, garlic. Stir fry the pot to make it fragrant, then add in the delicious soy sauce. Then add two spoons of sugar, then add some boiling water (not enough to pass the fish). Then add two spoons of vinegar (preferably aged vinegar)
Step3:When the water boils, put in the fried fish. Stew in high heat for 20 minutes. Add some old soy sauce and salt
Step4:Stew for about 5 minutes. Remove the fish. Put the carrots in the soup. When the carrots are soft, add starch and thicken.
Step5:When the soup is thick, add shredded carrots, coriander and minced garlic.
