My family usually prefer to steam white meat with winter vegetables. But the most authentic way is to use sprouts. The best sprouts are produced by Yibin. My friend just gave me some, so I used it this time. It's good to eat and look good. The key is to make meat skin. I can make beautiful wrinkled skin according to my method.
Step1:After scraping the pork, wash it. Boil it with water until it's broken. Drain the water.
Step2:On the other hand, use toothpicks to insert countless small holes in the skin.
Step3:Put soy sauce on the skin. Let it air dry naturally.
Step4:Spread the soy sauce again. Also wait for it to air dry. The purpose of air drying is to avoid scalding yourself when frying skin at the back.
Step5:Put a small amount of oil in a non stick pan. It doesn't need too much oil. It can be fried to the skin. I usually cut the meat to match the size of the bottom of the pot. If the oil jumps up, cover it. Move the pot on the stove so that the meat can be fried even when heated. The parts that can't be blasted (for example, if the heat is up, it has to be pressed with a shovel) should not be too long to avoid being burnt. The firepower should not be too large.
Step6:Put the fried meat directly into cold water. Open fire and boil.
Step7:The cooked skin is wrinkled.
Step8:Slice the meat. Add soy sauce, chicken essence, ginger, pepper and a little five spice powder. Like a little sweet can also put a little sugar mix. My family doesn't like that kind of sweet, so I won't let it go.
Step9:Wash the sprouts many times. Be sure to clean them. Otherwise, the sand will not be delicious. After washing, wring out the water. Cut into pieces.
Step10:Spread the meat slices with good taste on the bottom of the other bowl.
Step11:There will be ginger and pepper left in the bowl after mixing the meat. So put the sprouts in and mix them together. Spread them on the meat.
Step12:Steam it up. Turn to medium heat after the fire boils. Steam for 2.5 hours in total. My family likes to steam very harrow. The fat part will turn into that as soon as it goes to sleep. So it's OK to steam for 2 hours if you don't like it.
Step13:When you're done steaming, just turn it upside down with a plate. Have a taste
