Fried kidney with squid is a dish that has been eaten all year round. Every season when the garlic sprouts come to market, I love to make them. That's because the garlic sprouts are the best match for this dish. The red squid and the waist flower are interspersed with the delicate green garlic sprouts. The light color is a pleasant picture. Let alone the Q bullet of the squid, the crisp and tender waist flower, and the fresh and sweet garlic sprouts are integrated into the salty, fragrant and spicy red soup. It's so appetizing.
Step1:Cut the young garlic into 2 cm segments. Blanch for use. Cut ginger. Slice garlic. Cut green and red peppers in circles. Cut dry peppers in small segments.
Step2:The fresh squid goes to the membrane, the bone and the internal organs. It's cleaned. When the waist flower is bought, it has been treated. When it comes back, it floats all the blood. It's drained and ready for use (the waist flower is usually bought with help. Split it in half, remove the waist core inside, put a flower knife on it and cut it into small pieces).
Step3:Remove the tail whisker of squid. Put the body piece on the chopping board in reverse. First cut it horizontally. The depth is two-thirds. The line spacing is about 1cm. After all, cut it longitudinally. The line spacing is the same. That's a beautiful flower knife.
Step4:Cut the cutted squid into appropriate segments. Also cut the tail into segments.
Step5:Blanch the squid in the boiling water. Take it up in a cylinder and drain it for use. Add some cooking wine, a little salt, soy sauce and starch to the waist flower and marinate it.
Step6:Heat the pot. Put some oil in it. Stir fry the kidney flower quickly until it is broken and ready to use (with soup).
Step7:Put a little more oil in the pot. Add ginger, garlic, dried pepper and stir fry until fragrant. Stir fry in the next spoonful of bean paste.
Step8:Put in the squid tube and stir fry. If it's too dry, add a little water.
Step9:Stir fry the garlic sprouts and add some soy sauce.
Step10:Pour the kidney flower and soup together and stir fry. Can you taste the salt or not? I usually don't add salt when adding the bean paste. Stir in the green and red pepper circles and stir fry together. Add some vinegar and a little sugar. Stir until the pepper circles become soft, turn off the heat.
Step11:It's gorgeous in color, spicy, salty and fresh. It's good to eat with wine.

Cooking tips:Squid must be removed from the film. Otherwise, it can't be rolled into a tube. Waist flower should be cleaned up. Otherwise, it will smell fishy. The process of frying should be quick and fire. If you don't like spicy, reduce the amount of pepper. But this dish is not very good without any spicy taste.
