I'm strongly against making hairy crabs into spicy, curry and other complex flavors. That's just a way of failing to live up to this god-given delicacy. But always steaming is boring. My friend just gave me a rice stone pot. I created a method of dry steaming without water. It's home-made osmanthus wine. It's mellow and fragrant. When it's cooked, the whole room is full of fragrance. I'm afraid that crabs will be robbed of their taste. After trying, I found that crabs taste stronger. It's really the best hairy crabs I've ever eaten.
