Step3:The potatoes are peeled, cut into small pieces and washed. There is no water on the surface.
Step4:Boil the oil in the pot. Fry the potatoes. The potatoes are fried with oil and then boiled together with mutton. It's not easy to spread the pot. The fried potatoes are taken out for use (in fact, the potatoes are fried).
Step5:Take the cooked mutton and control the water content. Keep the mutton soup for later use.
Step6:Put the oil in the frying pan and heat it up. Stir fry the mutton first. Then add the garlic. Stir fry the ginger for a while and add the soy sauce (I think my soy sauce is just for the sake of the mutton color). Add the mutton soup just now and cook it. Add half a tablespoon of XO sauce (some people like to put XO sauce when it's almost out of the pan. I've tried that too. I don't think it tastes good). Wash the head of the coriander and put it down together to cook.
Step7:After the mutton is fried, put it in the soup and boil it for about 40 minutes. After 30 minutes, I put the potatoes down and then put the remaining half spoon of XO sauce. Don't boil the soup too dry. It tastes better. Put some pepper and coriander out of the pot. It smells good
Cooking tips:When cooking mutton, salt has already been put in the soup. When soy sauce and XO sauce are put in, it's time to try salt. XO sauce with salt (little expensive) ha ha. My friends have skills to save some points and make delicious dishes.
