Today I'm going to teach you how to make chickens again. Dong'an chicken, a famous dish in Hunan Province, is named after Dong'an County of Yongzhou. It has a history of thousands of years. This Kwai dish is simple and quick to make. The little hen is boiled first and then braised. The fresh pepper is fried with chicken oil. Add a lot of rice vinegar and stewed to taste. The whole dish is tender and delicious. It's sour, fragrant and hot. It's quite like the straightforward and enthusiastic character of Hunan people.
Step1:To make Dong'an chicken, you need to choose a tender little hen. It's better to have no eggs. After the treatment, put the whole chicken into the boiling water pot. Boil for ten minutes.
Step2:When cooking the chicken, you can cut the ginger, the fresh red pepper and the millet pepper.
Step3:When the chicken is cooked to seven maturity, it can be fished out. When it's cool to not hot, cut the chicken into small pieces.
Step4:Then take the pot and heat it. Heat the chicken oil to 70%. Add ginger and pepper to make it fragrant. Then stir fry the chicken for a while. Pour in some cooking wine. Sprinkle in chili powder and millet peppers. Stir well and pour in Dong'an rice vinegar, chicken broth and salt. Cover and simmer for about five minutes.
Step5:It's about time for the soup to be collected. Stir fry the red pepper and shallot to make it out of the pot.
