Step1:Spit the sand - add two spoons of salt, a spoonful of vegetable oil and cold water for one hour. Let the beetle spit out the sand.
Step2:Prepare seasonings - diced pickles, bean paste, hot pot seasoning, pepper, dried red pepper, onion, ginger and garlic, cooking wine, sugar, soy sauce, oyster sauce.
Step3:After the cleaning and desilting of the flower beetle, remove the flower beetle and drain it. Add the boiling water just boiled. Soak for 25 minutes. Remove the shell in half open shape.
Step4:Break off the shell. Wash it with flowing water. Remove the sand more thoroughly. Discard the empty shell.
Step5:Stir fry seasoning - hot pot of cold oil, pepper and garlic on a low heat. Stir fry until fragrant. Add Pixian bean paste to a proper amount. See your personal taste. Add pickles, stir fry until white. Add hot pot seasoning, dry red pepper and a spoonful of sugar. Stir fry the seasoning.
Step6:Stir fry the carapace - over high heat. Stir fry the carapace. Add cooking wine. Stir fry for 12 minutes. Add in the soy sauce (instead of salt). Stir fry until cooked. Turn to low heat. Add oyster sauce.
Step7:It's done.
Cooking tips:Soak in boiling water. It's better than blanching. It can make the carapace meat adhere to the shell. The meat is more compact. Break off and wash. Remove sand more thoroughly. There are skills in making delicious dishes.
