I was at home last weekend. There was a smell of Ribbon Fish downstairs. It almost made me faint... I'll make a pot of hairtail at home this weekend anyway.
Step1:Wash and cut the hairtail. Marinate with pepper and salt for half an hour.
Step2:Pour the pickled hairtail into the fresh-keeping bag, add some starch and shake it to make the surface of hairtail stick with a thin layer of starch.
Step3:Deep fry the hairtail in a pot until both sides are golden.
Step4:Put sugar, vinegar, soy sauce and cooking wine into a small bowl and mix them into sauce.
Step5:Leave the oil left by fried hairtail in the pot. Stir fry ginger, onion, star anise and pepper.
Step6:Add the hairtail and stir fry.
Step7:Pour in the sauce and some water. Stew for 15 minutes.
Step8:Collect the juice over high heat. Add some soy sauce and color it. Just leave the pot.
Cooking tips:1. Fried hairtail can be coated with flour and starch on the surface of hairtail if it is afraid to touch the pot. 2. Don't turn over when frying hairtail. Turn over after one side is set. Otherwise, hairtail is fragile. There are skills in making delicious dishes.
