Step1:The market bought chicken feet. After completely defrosting, cut them in half and wash them. Especially the dirty things on the fins must be cleaned.

Step5:In cold water, put chicken feet, ginger and scallion into the pot, and boil them over high heat with proper cooking wine. Change to medium heat and cook for 1520 minutes.

Step7:Put the chicken feet in ice water immediately after cooking. Soak in ice water for 15 minutes. It's better to use ice here. Because the cooked chicken feet are very hot. Even if it is ice water, so many chicken feet will be added at once. The ice water will become warm water. If you use ice, you don't have to worry about it. It must be soaked in ice water. Only the chicken feet soaked in ice water will be crisp.
Step8:Let's prepare the ingredients while soaking the chicken feet. Wash the coriander, red pepper and green pepper.
Step9:Cut half of the purple onion into shreds. Chop the garlic with a knife. Cut the red and green peppers into circles. Cut the cilantro. Cut the peppers. Star anise. Prepare the cilantro. Wash lemon with salt and slice. Lemon must be seeded. I didn't cut the passion fruit until I used it, so I didn't take it in the picture.

Step11:In a clean bowl, 2 tablespoons salt, 1 tablespoon cooking wine, 5 tablespoons soy sauce, 1 tablespoon oyster sauce, 3 tablespoons vinegar, 1 tablespoon sesame oil and 2 tablespoons sugar. Mix slightly.
