It's a very common dish in Southern Fujian. It's not limited to yellow croaker. Any fish will do. It's very delicious. But northern children don't have to be used to it. Jiangsu, Zhejiang and Shanghai should be OK. Because it's a little bit sweet.
Step1:Wash and cut the yellow croaker. Marinate with cooking wine and salt for 20 minutes.
Step2:Stir fry ginger slices and scallion in hot oil pan. Fry fish until white. Then add soy sauce, sugar and water
