Step1:Wash the fish. Cut the meat of the tail along the belly (a little deeper to let the fish climb well). Use kitchen paper to dry the slime on the fish. Put salt and cooking wine on it. Put sliced green onion and ginger into the belly of the fish. Lay the fish on the plate. Marinate for 15 minutes.
Step2:When the water is boiled, put the fish in the pot. Steam for 10 minutes. Turn off the heat and steam for 2 minutes. Turn off the heat.
Step3:When steaming the fish, don't be idle. Chop up the chives and peppers, dice them with ginger, shred them with scallions and spare them.
Step4:When the fish is out of the pot, sprinkle the sliced onion, ginger, chopped peppers and chopped chives on the fish. Heat oil 8% in a clean pan (peanut oil and sesame oil 7-3). Pour the hot oil on the fish evenly. Finally, drizzle with steamed fish and soy sauce.
