Squid is delicious and tender. It's popular whether it's fried, fried or barbecued. Today, I use green and red peppers and squid to fry together. It's not very spicy, but it's delicious and appetizing. If the squid is directly fried, it will come out of the water easily. So you can blanch it first and then fry it. But the time of blanching and frying is not easy to be too long. Otherwise, the taste will become hard.
Step1:Prepare the ingredients. Squid can be slaughtered by the seller.
Step2:Remove the black film from one corner of the squid. It is not easy to remove the black film. You can use a small brush to remove it.
Step3:Cut the squid horizontally from the center. Cut it first at the upper right corner of the squid without cutting. The depth is 3/4 of the squid. The distance between each knife is about 3 mm.
Step4:Cut straight from the bottom right corner. The same depth is three quarters of the squid. The distance of each knife is about 3 mm.
Step5:Then cut the squid into about 2.5cm long strips.
Step6:The squid should be cut into sections. Wash and control the water. Marinate with cooking wine and ginger.
Step7:Wash the green and red peppers and remove their heads. Cut them in half. Remove the seeds with the tip of a knife. Then cut them into long strips with a slanting knife. Cut the ginger into shreds and the garlic into pieces.
Step8:Use some soy sauce, oyster sauce, sugar and pepper. Add a little bit of raw powder and mix well to make the sauce.
Step9:Boil the water in the pot. Blanch the squid.
Step10:When you see the squid curling up, you can quickly take out the water to control it.
Step11:In another oil pan, stir fry the ginger and garlic.
Step12:Then add the green and red peppers and stir fry.
Step13:Add squid and stir fry.
Step14:Pour in a little fish sauce for freshness.
Step15:Stir fry the sauce in high heat to make it out of the pot.

Cooking tips:1. When cutting squid, you should cut it all at once without returning. Otherwise, the pattern is not beautiful enough. 2. It doesn't take too long for the squid to be blanched or fried. The taste will harden after too long. There are skills in making delicious dishes.
