In the middle and late October of each year, when the hawthorn is ripe, the little red fruit is very popular. But few people can accept the sour taste. Make it into a roll. It will become a favorite snack of the whole family immediately. -#It's bad for my snacks.
Step1:Clean and drain the fresh hawthorn fruit.
Step2:Put the hawthorn fruit horizontally on the chopping board. Cut it with a knife to block the waist. Break it with both hands. Because the hawthorn is pink when it is mature. It is easy to break it into two parts. Remove the seeds, break them into small pieces and put them into a clean basin.
Step3:Fill the basin with a layer. Sprinkle a layer of white sugar on it. Then deal with hawthorn fruit. A layer of hawthorn fruit and a layer of white sugar. After all, marinate for more than an hour.
Step4:Wash the fresh lemon and cut it into two pieces. Squeeze the juice directly into the hawthorn fruit basin.
Step5:Mix the Hawthorn pieces in the basin, cover them, and press them in the pressure cooker for 20 minutes (if there is no pressure cooker, steam them in the steamer for 35 minutes, but make sure to cover them to prevent the water vapor from flowing back into the basin, causing too much water in the basin).
Step6:This is the steamed hawthorn. There is also water in it. But this is the melted sugar water.
Step7:Pour the Hawthorn pieces and sugar water into the blender. In a few minutes, it becomes a fine puree. The puree concentration is just right. If you can't drop it on the shovel, you don't need to cook it. Add honey into the puree and mix well. You can taste the sweetness. Adjust it according to your preference.
Step8:Pour the puree into the mold. Scrape it with a scraper to a thickness of no more than 2mm. If the mold is not non stick, apply a thin layer of sesame oil inside to prevent it from sticking.
Step9:Put the baking tray in the oven. Bake it at 90 degrees for another period of time. When it's dry all around, it can be lifted and cut. Or leave it in the shade and air dry for 2 days.
Step10:Sweet and sour. Good for stomach and digestion. Natural and healthy snacks.
Cooking tips:The key for hawthorn not to boil is not to let water in when it is steamed, so it needs to be covered for steaming; it's free to be sour and sweet. What I do is to be sweet; the purpose of adding lemon juice is to prevent Hawthorn from oxidation and discoloration, to make the color look better. There's no need to be left out; the thinner the Hawthorn mud is, the better the volume is. This time, there's a plate that's not good for scraping thick. Finally, it's directly cut into strips. So we need to be patient when scraping mud. There are skills in making delicious dishes.
