Cooking Steps

  1. Step1:Cut tofu into pieces. Put cold water in the basin. Sprinkle some salt in the cold water and stir evenly. Cut tofu into pieces and put into the cold water with salt and soak for 15 minutes.

  2. Step2:Cut the tenderloin into shreds. Put them in a bowl. Then add the sweet potato powder, cooking wine and salt into the bowl. Mix the shreds with your hands and let them stand for 10 minutes. Add cooking wine to remove fishy smell. Add salt to make meat taste in advance. Add sweet potato powder to make meat more tender and smooth. You can also add in egg white and stir well. It's more tender. Starch can also be added without sweet potato powder. Starch has the same effect as sweet potato powder.

  3. Step3:Boil the water in the pot. Add the boiled water of the crab mushroom. The crab mushroom can be torn into small pieces. Blanching time should not be too long. About 1 minute. It's too long to cook the crab mushroom.

  4. Step4:Prepare materials. Wash dishes, lotus root slices, tripe slices, bamboo shoots slices, mushroom slices, kelp slices, ham sausage slices. Slice the scallion. Slice the ginger and garlic. Prepare the bean paste. Prepare the hot pot bottom.

  5. Step5:Put in the oil. Stir fry the ginger, garlic and scallion. Turn down the heat. Add 1 tablespoon of bean paste and stir fry. Add 3 tablespoons of dried chili noodles.   6. Step6:After boiling the water in the pot, add all kinds of ingredients. First add tofu, mushrooms, lotus root slices, bamboo shoots, bean sprouts and other foods that need to be cooked for a long time. After about 20 minutes, add tripe, beef blinds, potato powder, shredded meat, ham sausage and other foods. After about 5 minutes, add salt to turn off the fire and start the pot.

  7. Step7:Put the food in the pot. Wash the pot clean. Put the oil in the pot. Stir fry the dried pepper and turn off the heat. Pour the oil into a bowl full of tofu. Add shallot, coriander, sesame and pepper powder to the basin. A pot of delicious and drooling tofu is ready. I like spicy taste.
