It is well known that eggplant absorbs oil. But the food with big oil is not healthy. But following this recipe can bring you delicious home cooked eggplant with less oil.
Step1:Pour a little oil into the pot. Pour the eggplant slices into the pot. Dry the eggplant over medium heat until it is completely soft. Do not put the eggplant in the pot after it has white heart (when peeling, remove the hard part near the eggplant completely
Step2:A little oil at the bottom of the pot. Add two pieces of star anise and stir fry until fragrant. Then put the minced onion, ginger and garlic (reserve half of the minced garlic for later use). Stir fry until fragrant. Then put in the meat stuffing and stir fry until cooked. Add in the old soy sauce, pasta sauce, sugar, salt and monosodium glutamate. Then pour in half a bowl of water and put the stir fried eggplant into it.
Step3:Pour in starch water to thicken the sauce. Put in the remaining garlic and cilantro to make it out of the pot.
Cooking tips:When peeling, you should remove the hard part near the eggplant completely and have skills in cooking.
