Step1:Soak 500g clams in brine. Refrigerate for one night. Let the clams thoroughly spit out the mud. Wash and reserv
Step2:30g red pepper, 30g yellow pepper, dice. Dice half onion, half slice. Slice garlic, cut pepper into circles. Set aside
Step3:Pour a little oil into the pot. Add garlic slices and ginger powder to make it fragrant. Pour 50ml white wine, 30ml Weibi, 100ml pineapple juice, 20ml raw soy sauce and 10ml old soy sauce. Add 10g white sugar, a little sweet pepper powder and caraway root. After boiling, turn off the fire. Add the raw powder water and stir it slowly until thick to make sauce
Step4:Heat the pan. Add a little oil. Pour in the clams. Add 50ml white wine. When the clams are opened, take them out of the pan. Discard the clams that are not opened. Keep the water for clams
Step5:Start the oil pan. Stir fry the ginger, garlic, scallion, onion and sweet pepper in small heat. Add the sauce, clam juice and chilli circle to boil. Add the clam and stir fry
Step6:Mix in sesame oil, chopped coriander and cooked black and white sesame.
