Step1:Cut the shallot for red oil into small pieces. Cut the rest into shreds. Slice ginger. Cut garlic into small pieces. Chop coriander.
Step2:Marinate the fresh sliced tripe for 15 minutes; boil it in the boiling pot. Blanch the tripe until the water in the pot boils again. Then remove the boiled tripe. Put it in the cold water until the heat is completely removed. Remove and drain.
Step3:Put more oil in the frying pan than usual. Then put the seasoning of red oil into the cold oil. Fire and heat until all the light colored materials turn yellow obviously.
Step4:Put chili powder in the bowl. Put a filter spoon on it. Pour the hot oil into the bowl through the filter spoon. Do not pour out the filtered ingredients. Mix the oil and chili powder in the bowl to make red oil.
Step5:Chili oil is served in salt, sugar, soy sauce and rice vinegar. Stir well and mix with tripe and onion. Serve with a little coriander.
Cooking tips:1. My tripe is fresh tripe cut in the supermarket. If you buy a whole tripe, you can cut it into pieces or narrow strips according to your own habits. 2. The red oil you make may not be red enough. Or there is no red oil you buy outside. But the red oil you make is better than that you don't have any additives.
