Step1:Wash the chicken and dry the excess water with kitchen paper.
Step2:Weilin, sea salt 2G. Ginger 10g is ground into ginger paste with grinding plate.
Step3:Squeeze the ground ginger out of the ginger juice. Mix the ginger juice, Weilin and sea salt evenly.
Step4:Put the mixed Weilin ginger juice on both sides of the chicken. Massage the chicken slightly to help taste. Marinate for 20 minutes.

Step6:Wash 10g ginger and garlic and pat them soft. Use 10g butter and sea salt as standby.

Step12:Prepare the ingredients for making chili sauce. Wash the fresh red pepper and orange. Peel the garlic and ginger. Weigh the sea salt and brown sugar for standby.
Step13:Cut the red pepper into small pieces. If you like spicy food, you don't need to remove the seeds. Cut the orange in half and squeeze out the juice.

Step21:Take out the chicken and put it on the plate. The ginger and garlic in the chicken rice can be taken out. Mix the chicken rice loosely and then cover it. Wait until the chicken is not hot, cut into pieces.

Cooking tips:Take as many as you want for the homemade chili sauce. Use a clean, oil-free and anhydrous spoon to take it out. This can prevent the pepper from spoiling. If you can't eat it, seal it with a plastic wrap and refrigerate it in the refrigerator. It's recommended to finish it within 3 days. The homemade chili sauce will be delicious with Hainan chicken rice. It can also be used as dipping material for hot pot. I use black legged chicken. It's not big, so I cook for 25 minutes. The oranges used in chili sauce can be replaced by kumquat or lime juice. This kind of long red pepper taste will not be very spicy.
