Step1:Prepare raw materials. Soak dried agaric in cold water in advance.
Step2:Shred tenderloin. Add a little salt, black pepper, some sesame oil, egg white and starch. Mix well and set aside.
Step3:Cut the fresh bamboo shoots into thin threads.
Step4:Cut the fungus, carrot and green pepper into shreds.
Step5:Cut ginger and pickled peppers into shreds. Cut shallots and scallions into sections. Cut scallions into leaves. Cut garlic into pieces. Chop bean paste into small pieces.
Step6:It's said to boil in the pot. Put in the fresh bamboo shoots and scald them for later use.
Step7:Heat the pot. Add some oil and heat it to 60% heat. Add a little garlic and stir fry.
Step8:Add the shredded meat and stir fry to change the color.
Step9:Add shredded fresh bamboo shoots, shredded carrots and shredded green peppers. Stir fry until the color changes. Leave the pot for later use.
Step10:Add some oil to the pot again. Add garlic and bean paste. Stir and fry the red oil slowly.
Step11:Add shredded ginger, scallion and pickled peppers. Add some soy sauce, vinegar and a little sugar. Stir fry until fragrant.
Step12:Pour in the previously fried shredded meat mixture. Stir evenly.

Cooking tips:1. Blanching the bamboo shoots can reduce the oxalic acid content, and the taste is better; 2. The bean paste is salty. When marinating the meat shreds, put less salt. Do not put salt in the later production process. There are skills in making delicious dishes.
